If you store maize in Ghana, aflatoxin is your biggest invisible enemy. It does not smell. It does not change the colour of the grain. You cannot taste it. And by the time you can see it — a faint grey-green fuzz on the surface of a sack — the contamination has already spread far beyond what is visible.
Understanding aflatoxin is not just an agricultural concern. It is a financial one.
What Is Aflatoxin?
Aflatoxin is a group of toxic compounds produced by the mould Aspergillus flavus and Aspergillus parasiticus. These moulds are common in soil and plant matter across West Africa — they are essentially everywhere. Under normal conditions, they are harmless. But in specific environmental conditions, they produce aflatoxin as a metabolic byproduct.
Those conditions are well-documented:
- Temperature above 25°C (optimum production at 28–35°C)
- Relative humidity above 65% (water activity above 0.80)
- Grain moisture content above 13–14%
In Ghana’s grain warehouses — particularly in the Northern Region, where temperatures routinely exceed 30°C and humidity fluctuates significantly — these conditions are not unusual. They are routine.
Why It Is Dangerous
Aflatoxin B1, the most common form, is classified by the World Health Organisation as a Group 1 carcinogen — meaning it is conclusively proven to cause cancer in humans. Chronic low-level exposure is linked to:
- Liver cancer — Ghana has one of the highest rates of hepatocellular carcinoma in the world, and aflatoxin exposure is a primary driver
- Immune suppression — particularly dangerous in children under five
- Stunted growth — chronic aflatoxin exposure is a contributing factor to child stunting in rural Ghana
For adults, the risk comes from consuming contaminated grain regularly over years. For children, even short-term exposure is harmful.
The Financial Cost
Beyond the health implications, aflatoxin destroys commercial value.
Ghana’s export maize must meet strict aflatoxin limits — typically below 10 parts per billion (ppb) for the EU market, and 20 ppb for most African markets. Contaminated grain cannot be exported, cannot be sold to processors, and in severe cases cannot legally be sold at all.
For a warehouse operator holding GHS 30,000 of maize, a contamination event does not just reduce value — it eliminates it entirely. Contaminated grain cannot be blended into clean stock. It cannot be sold at a discount. It must be destroyed.
The One Condition You Can Control
Here is the critical insight that changes everything: you cannot control the mould spores. They are in the air, in the soil, on the grain itself before it arrives at your warehouse. You cannot eliminate them.
But you can control the conditions that allow them to produce aflatoxin. Specifically, humidity.
Keep relative humidity consistently below 65% in your storage environment, and Aspergillus cannot produce meaningful aflatoxin. The mould may be present, but it remains dormant. The grain remains safe.
This is not a complex intervention. It requires:
- Knowing what the humidity actually is — not guessing, not checking once a week, but monitoring continuously
- Acting quickly when it rises — opening ventilation, repositioning grain, or applying drying before the threshold is crossed
- Having an alert system — so that a problem at 2am in a warehouse 40km away is caught before the morning shift
What Traditional Monitoring Misses
The standard approach in Ghana’s grain warehouses is manual inspection: a warehouse manager walks through, looks at the grain, sometimes checks for visible mould, and reports that conditions seem fine. This is done every few days, or weekly.
The problem is that aflatoxin contamination can progress from undetectable to severe in 48–72 hours under the right conditions. A weekly check catches nothing useful. Even a daily check often misses the window where intervention is still possible.
A continuous monitoring system — one that checks every 15 minutes and sends an SMS alert the moment humidity crosses 65% — closes that window entirely.
A Practical Guide to Prevention
1. Monitor before you store Test your storage environment for temperature and humidity before filling it with grain. A warehouse that runs at 70% RH empty will almost certainly exceed safe limits when full of warm, respiring grain.
2. Verify grain moisture on arrival Grain arriving at your warehouse above 13.5% moisture content is high-risk. Measure before storing, or request certification from the supplier.
3. Ventilate strategically In Northern Ghana, early morning humidity is often significantly lower than afternoon levels. Ventilating at dawn rather than midday can reduce average humidity meaningfully.
4. Separate by condition Any pallet showing early signs of heat or elevated humidity should be physically separated from healthy stock immediately. Aflatoxin spreads from pallet to pallet through spore transfer.
5. Install continuous monitoring Manual inspection is a supplement to automated monitoring, not a replacement for it. A sensor system that reads every 15 minutes and alerts immediately when conditions change is the only reliable way to catch problems in time.
